Scientific obejectives

  • To screen for and to produce novel enzymes for improved extraction and/or modification of bioactive components from fruits and berries
  • To elucidate the mode of action of both existing and novel enzymes acting on grape and berry cell wall components
  • To isolate new potentially bioactive components from berries and grapes by using novel technologies
  • To elucidate the chemistry and bioactivity of the isolated components (phenolic compounds, carbohydrates, lipids) alone or in combination

Technological objectives

  • To develop novel enzyme-aided processing concepts for grape and berry processing
  • To assess the suitability and economical feasibility of novel physical/mechanical or physicochemical processing technologies for grape and berry processing
  • To improve the quality of the products by the aid of physical/mechanical and enzymatic processing
  • To upgrade unutilised waste material, i.e. Process by-products to value-added functional food ingredients with positive health effects
